Ingredients
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- 8 small flour tortillas
- Oil for frying
- Blue cheese or ranch dressing for dipping
Instructions
- In a mixing bowl, combine the shredded chicken and buffalo sauce until well coated.
- Place a tortilla on a clean surface and add a portion of the buffalo chicken mixture and some shredded cheese.
- Roll the tortilla tightly and secure it with a toothpick if needed. Repeat with remaining tortillas and filling.
- Heat oil in a frying pan over medium heat.
- Fry the taquitos until golden brown and crispy, about 2-3 minutes per side.
- Remove from the pan and drain on paper towels.
- Serve warm with blue cheese or ranch dressing for dipping.
Notes
For a lighter version, you can bake the taquitos at 425°F for 12-15 minutes. Use fresh cilantro for brightness, and consider using rotisserie chicken for easier prep.
