Ingredients
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup milk or cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: croutons for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-5 minutes.
- Add the broccoli florets and cook for a few minutes, allowing them to brighten up in the heat.
- Pour in the broth and bring to a simmer. Cook until the broccoli is tender, about 10 minutes.
- Use an immersion blender to puree the soup until smooth. If you like it a bit chunky, blend only part of it.
- Stir in the milk or cream and shredded cheddar cheese until melted, stirring steadily until creamy.
- Season with salt and pepper to taste. Adjust as needed.
- Serve hot, garnished with croutons if desired.
