  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream

  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-5 minutes.
  2. Add the broccoli florets and cook for a few minutes, allowing them to brighten up in the heat.
  3. Pour in the broth and bring to a simmer. Cook until the broccoli is tender, about 10 minutes.
  4. Use an immersion blender to puree the soup until smooth. If you like it a bit chunky, blend only part of it.
  5. Stir in the milk or cream and shredded cheddar cheese until melted, stirring steadily until creamy.
  6. Season with salt and pepper to taste. Adjust as needed.
