Ingredients

  • 4 cod fillets (6 oz each), about 1 inch thick
  • 4 tablespoons butter
  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Butter for greasing dish


Instructions

  1. Preheat the oven to 400°F. Butter a 9×13 inch baking dish.
  2. Pat the cod fillets completely dry with a paper towel. Season both sides with salt and pepper.
  3. Arrange the fillets in the prepared dish, giving them a little space.
  4. Melt the butter in a small saucepan over medium heat until foaming, about 2 minutes.
  5. Remove from heat and stir in the panko, parsley, garlic powder, and lemon zest until the mixture resembles wet sand.
  6. Divide the breadcrumb mixture evenly over the fillets, pressing gently to adhere.
  7. Drizzle with lemon juice and olive oil.
  8. Bake for 12-15 minutes until the fish flakes easily with a fork and the topping is golden brown.
  9. Let rest for 2 minutes before serving.
