Description

A cozy one-pot dish featuring tender chicken smothered in a creamy sauce served over fluffy rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Salt and pepper to taste


Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook chicken for 5-7 minutes on each side until golden brown.
  3. Remove from skillet and set aside to rest, covering lightly with foil.
  4. In a saucepan, boil chicken broth with salt, add rice, reduce heat, cover, and simmer for 15-20 minutes until tender.
  5. In the same skillet, melt butter over medium heat, whisk in flour to form a roux.
  6. Gradually add milk while whisking until smooth and the sauce thickens, whisking constantly.
  7. Stir in spices and cheeses until melted and creamy.
  8. Return chicken to skillet, spoon sauce over it, and serve hot over rice.

Notes
