A cozy one-pot dish featuring tender chicken smothered in a creamy sauce served over fluffy rice.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 1 ½ cups whole milk
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- Garlic powder
- Onion powder
- Smoked paprika
- Salt and pepper to taste
Instructions
- Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat and cook chicken for 5-7 minutes on each side until golden brown.
- Remove from skillet and set aside to rest, covering lightly with foil.
- In a saucepan, boil chicken broth with salt, add rice, reduce heat, cover, and simmer for 15-20 minutes until tender.
- In the same skillet, melt butter over medium heat, whisk in flour to form a roux.
- Gradually add milk while whisking until smooth and the sauce thickens, whisking constantly.
- Stir in spices and cheeses until melted and creamy.
- Return chicken to skillet, spoon sauce over it, and serve hot over rice.
Notes
Great for leftovers; freezes well. Adjust spices for picky eaters. Try with a side salad or roasted vegetables.
