Ingredients
- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 2 eggs, scrambled
- 1 cup mixed vegetables (such as bell peppers, carrots, peas)
- 2 tablespoons vegetable oil
- 3 tablespoons bang bang sauce (mayonnaise, sweet chili sauce, sriracha)
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat oil in a large pan or wok over medium heat.
- Add the mixed vegetables and stir-fry until tender.
- Push the veggies to one side, add the scrambled eggs, and scramble until cooked.
- Add the cooked chicken and rice, stirring to combine.
- Pour in the bang bang sauce and mix everything well.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions.
Notes
Use day-old rice for better frying. Adjust the heat of the bang bang sauce by modifying the amount of sriracha added.
