Ingredients
- 4 large eggs
- 200g feta cheese
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine the cherry tomatoes and spinach. Drizzle with olive oil and season with salt and pepper. Toss gently to mix.
- Crumble the feta cheese over the vegetables.
- Using a spoon, create small wells in the mixture and crack an egg into each well.
- Bake in the preheated oven for about 15-20 minutes, or until the eggs are set to your liking.
- Remove from the oven, garnish with fresh herbs if desired, and serve warm.
Notes
For a heartier version, add a diced onion or thin slices of red pepper at the start. Use fresh basil for a brighter taste. Store leftovers in an airtight container for up to two days.
