A rich and creamy soup filled with bacon, cheddar, and gnocchi—a comforting meal perfect for family gatherings.
Ingredients
- 8–10 slices bacon, cooked and chopped
- 1 tbsp butter or olive oil
- 1 large onion, diced
- 2 large carrots, peeled and sliced
- 4 cups chicken broth
- 1–2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder (or 4 cloves minced garlic)
- ¼ tsp dried thyme
- ½-1 tsp red chili flakes (optional)
- 16 oz gnocchi
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese (medium or sharp)
Instructions
- Cook bacon in a large pot over medium heat until crispy. Remove and set aside, keeping some fat in the pot.
- In the same pot, heat butter or olive oil. Add diced onions and sliced carrots. Sauté until tender, about 5 minutes.
- Pour in chicken broth and bring to a gentle simmer.
- Stir in heavy cream, then add seasonings gently. Taste and adjust salt and pepper as needed.
- Stir in the shredded cheese. Watch it melt until the soup turns creamy and luscious.
- Add gnocchi, stirring for about 2 minutes or until they float to the top and soften.
- Finally, add chopped bacon back into the pot. Give it a good stir to combine all flavors, then serve hot.
Notes
For freshness, consider adding herbs like thyme or basil. Store leftovers in an airtight container for up to three days, or freeze for a month.
