Ingredients

  • 1 pound of sausage (your choice: sweet or spicy)
  • 8 ounces of bow tie pasta
  • 1 pound of Brussels sprouts
  • 1 small butternut squash
  • 3 cloves of garlic
  • 2 tablespoons of butter
  • Salt, to taste
  • Pepper, to taste
  • 3 tablespoons of olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash and Brussels sprouts into bite-sized pieces.
  3. Toss them in olive oil, salt, and pepper, and roast in the oven for 25-30 minutes until tender and caramelized.
  4. While the veggies are roasting, cook the bow tie pasta according to package instructions until al dente.
  5. In a large pan, cook the sausage over medium heat until browned, about 5-7 minutes.
  6. Add minced garlic to the sausage and sauté for 1-2 minutes, stirring until fragrant.
  7. Once the pasta is cooked, drain it and combine it with the sausage and roasted vegetables in the pan.
  8. Add butter to the mixture, stirring until it melts and everything is well coated.
  9. Serve warm and enjoy!
