Description
A heartwarming autumn dish featuring sausage, pasta, roasted Brussels sprouts, and butternut squash that brings families together.
Ingredients
- 1 pound of sausage (your choice: sweet or spicy)
- 8 ounces of bow tie pasta
- 1 pound of Brussels sprouts
- 1 small butternut squash
- 3 cloves of garlic
- 2 tablespoons of butter
- Salt, to taste
- Pepper, to taste
- 3 tablespoons of olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the butternut squash and Brussels sprouts into bite-sized pieces.
- Toss them in olive oil, salt, and pepper, and roast in the oven for 25-30 minutes until tender and caramelized.
- While the veggies are roasting, cook the bow tie pasta according to package instructions until al dente.
- In a large pan, cook the sausage over medium heat until browned, about 5-7 minutes.
- Add minced garlic to the sausage and sauté for 1-2 minutes, stirring until fragrant.
- Once the pasta is cooked, drain it and combine it with the sausage and roasted vegetables in the pan.
- Add butter to the mixture, stirring until it melts and everything is well coated.
- Serve warm and enjoy!

For added flavor, consider adding fresh herbs like basil or parsley. This dish stores well for up to three days in the fridge.
