Description
A bright and refreshing apple salad mixed with grapes, toasted pecans, and dried cranberries, perfect for any gathering or meal.
Ingredients
- 4 medium-sized apples, cored and chopped (mix of sweet and tart)
- 1 cup seedless grapes, halved
- 1 cup pecans, roughly chopped and toasted
- 1/2 cup dried cranberries
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon cinnamon (optional)
- Salt and pepper to taste
Instructions
- Core and chop the apples into bite-sized pieces. Leave the skin on if desired.
- Wash the grapes and slice them in half. Place chopped apples and halved grapes in a mixing bowl.
- Toast the pecans in a pan over medium heat for about 5 minutes until golden brown, stirring occasionally.
- Remove the toasted pecans from heat and let them cool, then add them to the bowl with apples and grapes, along with dried cranberries.
- In a separate bowl, whisk together Greek yogurt, honey, apple cider vinegar, and cinnamon until smooth.
- Pour the dressing over the salad mixture and gently toss until evenly coated.
- Adjust seasoning with salt and pepper as needed.
- Chill in the refrigerator for about 30 minutes before serving.
- Serve cold or at room temperature, garnishing with additional pecans or cranberries if desired.
Notes
Can be made ahead of time; just keep the dressing separate until serving. Pairs well with grilled chicken or as part of a brunch spread.
