Ingredients
- Mixed greens (spinach, arugula, romaine)
- 1/4 cup apple cider vinegar
- 1/2 cup olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
- Optional: sliced apples
- Optional: walnuts
- Optional: feta cheese
Instructions
- In a small bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, honey, salt, and pepper until well combined.
- In a large salad bowl, combine the mixed greens and toss with the vinaigrette until evenly coated.
- Add sliced apples, walnuts, and feta cheese if desired.
