Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 cup apple cider
- 3 cloves garlic, minced
- 2 tbsp honey
- 2 tbsp Dijon mustard
- 1 tsp fresh thyme, chopped
- Salt and pepper to taste
- 2 tbsp balsamic vinegar
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- Season the chicken thighs with salt and pepper, then place them in the greased baking dish.
- In a mixing bowl, whisk together the apple cider, honey, Dijon mustard, minced garlic, balsamic vinegar, and chopped thyme until combined.
- Pour the glaze over the chicken thighs, coating each piece well.
- Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the dish rest for about 5 minutes, then drizzle with the remaining glaze before serving.
Notes
For a one-pan meal, toss in some carrots or baby potatoes into the baking dish. You can also experiment with different herbs like rosemary or sage.
